For the Table: Crispy Branzino over Fregola & Salsa Verde
With summer on the horizon, I'm feeling a familiar pull to get back into the kitchen—something that always seems to happen to me as the weather warms up. Maybe it’s the craving for fresh, seasonal ingredients that come with warmer days, or maybe I’m just re-motivated to nourish myself after a few months of indulging in heartier, comforting meals. Either way, when the seasons shift, so does my desire to get cooking again.
Cooking, for me, has become its own form of leisure. It's not about complexity; it's about the joy of creating something with your own hands and finding peace in the process. It’s an often needed reminder that taking time to nourish ourselves matters, not just for the body, but for the mind and mood too.
One recipe I'd feel guilty for not sharing is a crispy branzino with salsa verde from Justine's Table. It has been Margot and me's go-to for a while now and it is just so good every time. The fish is simple—just butter, lemon, and thyme—while the herbs for the salsa verde do require a bit of chopping. Still, it’s totally worth the effort. Fry the Branzino on both sides in a skillet, toss al dente fregola with the salsa verde and then you're done. It's a simple yet light and delicious meal that tastes like you put way more effort into it than you did.
